Hypnotising Mandala Cakes

When we first saw these pictures we were amazed at the patterns and colours. We were even more impressed when we found out that these are in fact cakes. Stephen McCarty, a vegan-raw chef from LA, makes these elaborately beautiful cakes using only raw, vegan ingredients. He goes under the name Sukhavati Raw Desserts, Sukhavati meaning “Happy” in Hindi.  He displays images of all his amazing cakes on his Instagram page, from where you email your orders.

A mandala (the pattern you see decorated on the cakes) is a spiritual and ritual symbol in Hinduism and Buddhism, representing the universe.   The colours used in McCarty’s cakes are all made from natural plant and fruit extracts. Some of the flavours include banana jungle nut butter chocolate cheesecake, coconut lime raw vegan cheesecake and acai blueberry mango cheesecake. Our mouths are watering at the thought. I think we can all agree that these cakes just look too good to eat, but we’d be willing to try a slice
