Anna’s Superfood Salad (serves 6-8)
Ingredients for the salad:
– Spinach (strengthens the immune system and fights infection)
– Goats cheese
– Pomegranate
– Pumpkin seeds (protein)
– Beetroot – Blueberries (antioxidant, high in vitamin C and fibre)
– 1 avocado (good fat, and eating avocados help the body absorb other nutrients)
For the Dressing:
– Olive oil
– High end balsamic vinegar
– Sea salt
– Pepper
– Mustard (I like Dijon)
– Honey
They don’t call me the ‘Queen of Salads’ for nothing! I love eating and preparing salads, I often use dinner leftovers or grilled vegetables, fruit etc. to make tasty, fun salads. It is important to me to make sure that I eat my greens and consume good amounts of nutrition, and inventive salads are great for this. For the superfood salad I used a whole big bag of spinach which I chopped up, baby tomatoes, cooked beetroot, seeds of half of a pomegranate, a whole crumbled up goats cheese, half a punnet of blueberries and a good handful of toasted pumpkin seeds (I always roast my seeds in a dry pan until they turn golden and crackle a little – it brings out all the flavour)
And to make sure your salad stays healthy, I always always make my own dressing! The better ingredients you buy the better the flavour. I love a good amount of extra virgin olive oil, thick, dark balsamic vinegar, sea salt, pepper, mustard (to spice things up) and honey to take the edge off. And of course, season to taste.
